Bircher-Benner used to prepare the Bircher muesli with condensed milk. And even today, Bircher muesli is a particularly popular breakfast, especially in Switzerland. But it is also becoming increasingly popular in Germany. There are already a variety of variations available.
The basic Bircher muesli recipe – a Swiss original

Ingredients:
- Oat flakes
- Apple
- Lemon
- Milk
- Chopped hazelnuts
Preparation:
First, mix 4 tablespoons of cereal flakes with 120 milliliters of water and let the mixture soak in the refrigerator overnight.
The next morning, mix grated apples with the juice of half a lemon. Now add the apple together with the milk and a tablespoon of chopped hazelnuts to the flakes. Use the remaining hazelnuts for sprinkling.
If the consistency is still too firm for you, you can stir in a little milk afterwards. If you like it particularly creamy, you are welcome to add a little cream or yoghurt to the milk.
What other Bircher muesli recipes are there?
There are now a number of variations on the well-known Bircher muesli. In particular, different toppings such as seeds, chia seeds and nuts are becoming increasingly popular. Eating a healthy and balanced breakfast is very important in today's nutrition-conscious society.
More and more people are also concerned about the sustainability of their food. No wonder that the vegan version of Bircher muesli is becoming increasingly popular. Simply use a plant-based alternative such as rice milk or oat milk instead of cow's milk. Almond milk gives Bircher muesli an extra nutty flavor.
As an additional topping, you can add fresh fruit, fruit puree or a little sweetness such as honey, agave syrup or maple syrup. The oats are mixed with liquid and placed in a bowl or closed container. The liquid is absorbed by the oats. Then the whole thing is put in the fridge overnight and the next morning grated apples and other ingredients are added.
This creates a particularly creamy consistency that you can still refine. Overnight oats are also very popular with chia seeds. As with Bircher muesli, the variety of recipes is endless.
You can refine the overnight oats with toppings of your choice or with yoghurt or low-fat quark. Simply stir about 100 grams of yoghurt per portion into the muesli.
Berry overnight oats
With vanilla and fresh berries, overnight oats taste particularly delicious in summer.
Ingredients for 4 people:
- 30 grams of dried berries
- 1 vanilla pod
- 125 milliliters of orange juice
- 100 grams of oats
- 400 grams of whole milk yoghurt
- 2 apples
- 2 tablespoons of lemon juice
- 90 grams of almonds
- 125 grams of blueberries
- 125 grams of blackberries
- 150 grams of strawberries
- 6 tablespoons of agave syrup
Preparation:
First, chop the dried berries. Then, cut open the vanilla pod and remove the seeds. Boil the seeds and the pod together with the berries, the pod and the orange juice. Mix the berry mixture with 100 grams of flakes and the whole milk yoghurt. Leave to chill in the fridge overnight.
In the morning, roughly grate the apples, mix with lemon juice and add to the flakes together with chopped almonds. Serve with the berries and a little sweetness of your choice.
